Frequently Asked Questions (FAQ)

How do I take care of my Suraisu Knife?

We believe the quality and performance of Suraisu Knives are best in class, and we hope you enjoy the pristine craftsmanship of your new knife. With proper care, every Suraisu knife will hold a special place in your Kitchen for a long time to come.

Important

This is a high-carbon steel blade kitchen knife that can get rust and discolor if proper care is not taken, and requires extra care and attention to prevent rust.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade and handle thoroughly, and wipe it clean and dry with soft clothes. You may apply Camellia oil (Japanese tea oil) on the blade for increased longevity and keep it in dry place.
  • This is an extremely sharp knife. Please pay special attention while using and storing it.
  • Unlike German or western made knives, Damascus knife blades have a thinner cutting edge for sharper cutting and easier re-sharpening.
  • Please protect the edge from hitting hard materials to avoid chipping or cracking of the blade.
  • Please do not use it to cut hard bone or frozen foods, or any hard shell food.
  • We recommend using whetstones to re-sharpen the knife, when the blade gets dull over prolonged usage.

Are Suraisu Knives made with real Damascus steel?

The number one question we get asked all the time ;) Yes Suraisu knives feature a Japanese damascus steel blade, hence utmost care required for these performance blades.

  • There are several cheaper knives available in marketplaces that offer "japanese damascus pattern" knives at low cost. There's a huge difference between these laser-etched damascus pattern and real Damascus. The laser produces a consistent and very dark pattern on these cheap steel blades.
  • Actual folded Japanese-steel knives like Suraisu with 37 - 73 layers of steel give rise to a natural damascus pattern that emerges after  the steel is folded over itself multiple times. This gives the Damascus knife it's strength and edge retention for extensive periods of time.
